I know that I have to host this, but would it be possible for me to host, say, irc.hackfest.ulmb.com as an IRC server?

You can install only PHP programs on this server.

It doesn't require installing anything on the server.. just pointing irc.hackfest.ulmb.com to my IRC server.

If I bought, say, www.hackfest.com - I could do it then, couldn't I, since I own the domain?

No it still would not be possible.

We use wildcard dns, so we dont have a zone file for each doman, this makes it impossible to add custom records for domains.

Eh, that sucks. :/
So there's no possible way? I could forward the godaddy DNS of the subdomain to my IRC, couldn't I?

You can do it through a 3rd party. But not through us :(
